Event caterers work far from a permanent kitchen, so temperature control takes planning. This is a short summary of the main figures. Always check the latest guidance from the Food Standards Agency and your local authority.
Chilled food
Chilled food must be kept at 8°C or below in the UK. The Food Standards Agency recommends 5°C or below, which gives a safer margin.
Frozen food
Frozen food is normally stored at -18°C or colder. Food that has thawed should not be refrozen unless you cook it first.
Hot food
Hot food should be held at 63°C or above until it is served.
Why events are a challenge
- Long service times with food out of storage
- Hot weather and direct sun
- Marquees and fields without proper cold rooms
- Small domestic fridges that cannot cope with volume
How a fridge trailer helps
A fridge trailer gives you proper chilled storage next to your service area. You can keep stock at temperature until the last moment and reduce the time it spends outside.
Use a thermometer to check temperatures regularly and write them down. Records show you were in control if an officer asks.
Hire a trailer for your event
Halo Rentals delivers, sets up and collects fridge and freezer trailers across the UK. 3 days is £295 + VAT, plus delivery at £1.00 per mile. See event and festival trailer hire or call us on 07514 780079.
